Roasting lechon = religious?

Now this is curious.
Amante Enad says he has received a citation for roasting pigs in his back yard. He claims village officials are unfairly barring him from a cultural and religious tradition, and has ordered him to get rid of his roasting equipment. Read more.

I don't know a whole lot about religious practices, but I don't think there's ever a religious tradition entailing the roasting of pigs.
